Pavakkai/Bittergourd Fry

Bitter gourd or pavakai is a very good vegetable,but most of the time, we dont know what to do with it. This is a very simple and delicious bitter-hot vegetable fry.

Ingredients:

  • Bitter gourd – 2

  • Chilli powder – 1 tbsp

  • Salt to taste

  • Tamarind water - 1 cup

  • Olive oil or any cooking oil - 2 tsps.

Preparation:

  • Chop the bitter gourd. I generally slice the gourd in rings and then remove the inner spongy seeds.

  • Soak the cut bitter gourds in tamarind water for few mins,say 10 mins,to remove the excess bitterness.

Method:

  • Heat oil in a pan, in low flame.
  • Drain the tamarind water from the bitter gourd and add the chilli powder and salt to it and mix well.
  • When the oil is hot,add the bitter gourd mixed well with chilli powder and salt.
  • Let it become brown.
  • Then turn them the other side and cook until both the sides are equally fried and brown in color.
